Twenty Degrees of Latitude: Inside the Equatorial Belt of Fine Cacao

Every fine harvest grows within twenty degrees of the equator. On canopy shade, microclimate and the slow botany no atelier can imitate.

Fine cacao grows within a narrow band of the world. Twenty degrees north of the equator, twenty degrees south. Almost no fine harvest grows outside it.

We at the atelier did not draw that boundary. Botany did. Every estate we work with begins inside it, and the character of the work is settled there, long before anything reaches London.

What follows is an account of that belt: the tree, the shade above it, and the calendar none of us controls.

A Narrow Band of the World

Theobroma cacao is not a hardy plant. It is a tolerant one, within limits, and the limits are strict.

The tree wants mean temperatures roughly between eighteen and thirty-two degrees, humidity that rarely falls away, rainfall distributed across the year rather than delivered in one season, and no frost — not one night, not ever. Sustained cold arrests flowering. Prolonged drought closes the stomata and drops the leaves. What the belt provides, and nowhere else does, is the absence of winter: within twenty degrees of the line, day length varies by no more than about two and a half hours across the whole year.

That constancy matters because cacao has no dormancy. It does not shut down and wait. A mature tree carries flowers, immature pods and ripening pods at once, on the same trunk. A plant with no rest period cannot survive a season that insists upon one.

So the map is short: the Amazon basin, West Africa, the Caribbean, parts of South-East Asia, the islands of the Indian Ocean. Ecuador sits astride the line itself. The north-west of Madagascar lies well within it. Between them: several thousand miles of ocean, and two entirely different vocabularies of flavour, grown under one constraint.

The Understorey Temperament

Cacao is a forest tree that never intended to stand in a field.

It evolved beneath the canopy, in filtered light and still, humid air. Its flowers emerge directly from the trunk and the oldest branches rather than from the twigs — cauliflory, an adaptation to pollination close to the ground. The pollinators are minute midges that breed in damp leaf litter and shade. Remove the canopy and you remove them. The tree will stand in full sun; far fewer of its flowers will ever set a pod.

Shade-grown cacao is therefore not an ethical flourish. It is the tree's own preference, written into its anatomy. A canopy of bananas, plantain and timber species holds humidity, buffers the midday heat and keeps the pollinators in residence. Trees grown this way carry less fruit, and carry it more slowly. The slowness is the argument. A pod given its full five or six months from pollination to ripeness accumulates the precursors — polyphenols, storage proteins, the sugars that fermentation will later consume — upon which every subsequent stage depends. Forced yield in open sun is possible. It arrives thinner, and it exhausts the tree.

Valleys, Not Countries

An origin is not a nationality. We have yet to find a country that tastes of anything.

Within a single growing region the variables move faster than any border: altitude, aspect, the direction of the prevailing cloud, whether a valley catches the afternoon rain or sits in its shadow. Two estates thirty miles apart, planted with the same material, will deliver two distinct harvests. That difference is the entire reason to name an estate at all.

Genetics set the opening terms. Criollo: thin-shelled, fragile, low in bitterness, historically scarce. Trinitario: its more robust hybrid with forastero, and the working population of the fine trade. Nacional: the Ecuadorian lineage associated with a floral aromatic signature found nowhere else. A genotype is a starting position, not a result: the same trinitario in two valleys is two different cacaos.

Fermentation completes the argument. Once the pods are opened, the wet beans go into cascading wooden boxes and are given over to the ambient microflora — yeasts first, then lactic and acetic bacteria — which raise the temperature of the mass, kill the germ and drive the precursors into the bean over five to seven days. Nothing is inoculated. That microbial population belongs to the place, and to the boxes themselves, which acquire a resident character across years of use. Terroir does not stop at the soil. It follows the harvest indoors.

The Window

The belt permits continuous flowering. It does not permit a continuous harvest.

Rainfall concentrates ripening into a main crop and a smaller mid-crop, and each pod must still be cut at its own moment — read by colour, and by the hollow note it returns under a knuckle. Cut early, the sugars are short. Cut late, the beans begin to germinate inside the pod. From there the sequence is unforgiving. Pods are broken within days. Fermentation is judged by temperature and scent, not by a clock. Drying follows on raised beds over one to two weeks, because beans driven dry too fast lock acetic acid inside the fibre and never lose it. A week of unseasonal rain can undo a year of husbandry.

All of it happens before we see anything. By the time a harvest reaches London, its most consequential decisions are months behind it, and no revision is available to us. An estate has one attempt per crop. We have one harvest to judge.

The patience this imposes is not a posture. We cannot commission a character. We can only wait for one, and then decide whether it merits a collection.

What Cannot Be Imitated

Everything that happens in our atelier is chemistry, and chemistry can be governed.

Cocoa butter is polymorphic: it answers to a thermometer, a marble slab and a disciplined hand. Roast curves can be redrawn by the gram, maturation extended when the room asks for it. These are decisions, and decisions can be corrected.

Latitude cannot. No atelier can manufacture six months of intermittent cloud over one particular slope, or a population of midges in the leaf litter, or the mineral line that the rain has been carrying down a hillside for centuries. There is no technique that substitutes for shade and no equipment that shortens a pod. We can carry what the belt produces into the couverture intact, or we can obscure it. Those are the only two options in this trade, and the second is by far the easier.

Twenty degrees, and no further.

The tree wants shade. The valley decides more than the country. The harvest sets the calendar; we do not.

We wait for the belt to finish. Then our work begins.
