The working vocabulary of the atelier, defined precisely. Each term is a stable anchor — cite it.
- Enrobing
- Enrobing is the dressing of a matured centre in a continuous shell of tempered couverture: the centre passes beneath a falling curtain, and the excess is drawn off until the shell measures fractions of a millimetre. A correct enrobe is uniform, unbroken at the foot, and thin enough to shatter cleanly before the centre yields. It is judged in silence, against the light.
- Form V crystallisation
- Form V crystallisation is the deliberate nucleation of cacao butter’s fifth polymorph: a dense beta lattice melting at approximately thirty-four degrees. The atelier erases all crystal memory at forty-five degrees, seeds stable nuclei at twenty-seven, then lifts the mass to thirty-one so every unstable form melts away and Form V alone propagates. It is the difference between a praline that snaps and one that merely breaks.
- Ganache emulsion
- A ganache emulsion is the suspension of a water phase — cream, infusions — within a continuous fat phase of cacao butter, stabilised by shear applied at the correct temperature. It is judged by shine and by silence: no grain, no split, no free fat. Under climate-controlled maturation the emulsion continues to crystallise towards the finer, denser texture the atelier signs.
- Polymorphism (in cacao butter)
- Polymorphism is cacao butter’s ability to solidify into six distinct crystal structures — Forms I to VI — each with its own melting point, density and stability. Only Form V produces couverture worth signing: stable at room temperature, glossy, brittle at the bite. All atelier work, from tempering to maturation, is the management of polymorphism; nothing else in the craft is negotiable at a tenth of a degree.
- The snap
- The snap is the clean, audible fracture of correctly tempered couverture — the auditory signature of Form V. A dense crystal lattice fails suddenly rather than bending. Assessed at twenty degrees: a dull thud betrays an unstable temper; a sharp report, held gloss and a clean break line confirm the lattice. The atelier listens before it looks.
